Potato and Leek Soup
Ingredients:
- 2 tablespoons olive oil
- 2 leeks, white part only, sliced
- 5 bacon rashers, chopped
- 1kg potatoes, peeled and chopped
- 1L chicken stock
- 375mL can evaporated light milk (or cream)
- parsley or chives to garnish
Method:
Heat oil in a large pot over low heat.
Cook bacon and leek for 5 minutes until leek is soft.
Add potatoes and mix to coat in the lovely flavours of the leek and bacon.
Add stock, bring to the boil, turn heat down to low, cover and simmer for 30 minutes.
Allow to cool slightly, then use a stab-mixer to puree (or blend in batches).
Stir through evaporated milk (or cream) and serve sprinkled with parsley or chives.
I only had about half the amount of stock so I watered it to match the recipe and added to taste salt and pepper used cream and then garnished with a little Shredded colby jack cheese. I made enough for Brandon and I and still three lunches. I froze one container and used one immediately. I always reheated on the stove and added about a 1tbls of cream when I reheated it. Best soup I have ever had.

ReplyDeleteIt has been the best recipe I have tried out. It tastes amazing from the freezer too. So what could be bad. Also Brandon likes it too(the way that he likes things).

ReplyDeleteSorry, ment to ask: what is a bacon rasher? 1kg potatoes? I think I can figure out the 1L of chicken stock? andddddd 375ml of cream? I am from the USofA and do not know these mesurements!!!!!!!!!!!!
ReplyDeleteI meant to post that a rasher is 5 to 7 pieces of bacon. 1 kg about 5 or 6 big potatoes. the other two you should be able to find like on the 2 cup pyrex it has ml. and well a liter is a liter. I had to use my friend google to find these out.
